Tortilla EspaΓ±ola, also known as Spanish Potato Omelet, is a classic Spanish dish consisting of thinly sliced potatoes and onions cooked in olive oil, mixed with beaten eggs, and then fried until golden brown. Ingredients:

-4 medium potatoes, peeled and cut into thin slices
-1 large onion, julienne cut
-6 eggs
-Olive oil
 -Salt to taste

Instructions:

1️⃣ Fry the potatoes: In a large frying pan, heat enough olive oil over medium heat. Add the potato slices and onion. Cook until tender, stirring occasionally. Remove the potatoes and onion with a slotted spoon to drain excess oil.

2️⃣ Beat the eggs: In a large bowl, beat the eggs with a pinch of salt until well mixed.

3️⃣ Combine potatoes, onion and eggs: Add the cooked potatoes and onion to the beaten eggs. Mix well to coat the potatoes with the egg.

4️⃣ Heat the pan: Remove excess oil from the pan and leave only a thin layer on the bottom. Heat over medium heat.

5️⃣ Pour the mixture: Pour the potato and egg mixture into the hot pan. Cook over medium-low heat for about 10 minutes, or until the edges begin to set.

6️⃣ Turn it over: With the help of a large plate, turn the tortilla over. Slide the tortilla back into the pan to cook the other side for about 5-7 more minutes, or until completely cooked.

7️⃣ Serve: Once cooked, remove the tortilla from the pan and place it on a plate. Let it rest for a few minutes before cutting.
