Puff pastries with lemon cream

Ingredients:


- 1 sheet of puff pastry, thawed

-3 eggs

-Zest of 2 lemons

-Juice of 2 lemons

-1/2 cup liquid cream or milk cream

-1/2 cup sugar

-Icing sugar to sprinkle (optional)


Instructions:


1️⃣ Preheat the oven: Preheat the oven to 200 °C.


2️⃣ Cut the puff pastry: Unfold the puff pastry sheet and cut it into squares or circles of the size you prefer.


3️⃣ Bake the puff pastry: Place the pieces of puff pastry on a baking tray lined with baking paper. Bake for 10-12 minutes, or until golden and crisp. Take out of the oven and let it cool down.


4️⃣ Prepare the lemon cream: In a bowl, beat the eggs with the sugar until you get a foamy mixture. Add the lemon zest, lemon juice and heavy cream.


5️⃣ Cook the cream: In a saucepan, heat the egg and lemon mixture over medium heat, stirring constantly, until it thickens. Remove from the fire and let cool.


6️⃣ Fill the cakes: Once the puff pastry and lemon cream are cold, fill the cakes with the lemon cream.


7️⃣ Sprinkle icing sugar: If desired, sprinkle icing sugar over the cakes for an extra sweet touch.


8️⃣ Serve and enjoy: Serve the puff pastry cakes with lemon cream on a pretty tray and enjoy their refreshing flavor. To enjoy! 


Tips:


You can decorate the cakes with fresh fruits such as raspberries or strawberries for a colorful touch.

Store the cakes in the refrigerator if you are not going to eat them right away to keep the lemon curd fresh.
