Ingredients:
-200 g of biscuits (digestive or butter)
-100 g butter (melted)
-500 g cream cheese (at room temperature)
-150 g sugar
-3 eggs (large)
-1 teaspoon vanilla essence
-1 teaspoon lemon zest (optional)
Instructions:
1️⃣ Preheat the oven to 160°C. Grease a 23cm diameter springform pan and cover the base with parchment paper.
2️⃣ Crush the cookies until you get fine crumbs. Add the melted butter and mix well until the crumbs are moist.
3️⃣ Press the cookie mixture into the base of the mold, forming a uniform layer. Refrigerate while you prepare the filling.
4️⃣ Beat the cream cheese in a large bowl until smooth and creamy.
5️⃣ Add the sugar and continue beating until well integrated.
6️⃣ Add the eggs one at a time, beating well after each addition. Add vanilla essence and lemon zest, if you decide to use it.
7️⃣ Pour the cream cheese mixture over the cookie base in the mold.
8️⃣ Bake the cheesecake for 45-50 minutes, or until the edges are firm but the center still jiggles a little.
9️⃣ Let the cake cool in the mold for 1 hour, then refrigerate it for at least 4 hours or overnight so that it sets completely.
