Chicken broth with vegetables

Indulge in the comforting warmth of homemade Chicken Broth with Vegetables. This savory concoction combines tender chicken pieces, hearty vegetables like carrots, celery, and onions, simmered to perfection in a rich broth. Perfect for chilly evenings or whenever you need a nourishing pick-me-up.



Ingredients :


-🍗 1 kilo of chicken (you can use thighs, breasts, or a mixture)

-🥕 2 chopped carrots

-🥔 2 potatoes, peeled and cut into cubes

 - 1 onion, cut into thin slices

 - 100 grams of peas (you can use fresh or frozen)

 - 100 grams green beans (cut into pieces)

-🍅 1 chopped tomato or 1 small can of mashed tomatoes

- 2 minced garlic cloves

-🍷 A glass of white wine (optional)

-🌿Spices: salt, pepper, thyme, and bay leaf as desired

- Olive oil for cooking


How to prepare : 


1. Browning the chicken: In a large frying pan, heat the olive oil. Add the chicken and leave it on both sides until cooked and cooked from the inside. Remove the chicken from the pan and leave it aside.


2. Cook vegetables: In the same pan, add onions and garlic. Cook until tender. Add carrots, potatoes and green beans and cook for a few minutes. 


3. Add tomatoes: Add chopped or mashed tomatoes to the vegetables. Cook for 5 minutes until the tomatoes shrink slightly. 


4. Add white wine: If using white wine, add it to the pan. Cook 2-3 minutes to evaporate the alcohol. 


5. Add the chicken: Return the chicken to the pan with the vegetables. Add peas and mix everything well. 


6. Watercress: Add salt, pepper, thyme and bay leaf as desired. Add a little water if necessary until the chicken and vegetables are cooked well.


7. Simmer: Cover the pot and simmer for 20-25 minutes until the chicken and vegetables are cooked and tender.


8. Serving: Remove the bay leaf before serving. Serve chicken hot.

You can add other seasonal vegetables such as zucchini or peppers to give the dish more variety.


If you prefer a more flavorful dish, you can marinate the chicken before cooking it with garlic, lemon and herbs
