Ingredients:

- 4 boneless, skinless chicken breasts

- 1 cup shredded mozzarella cheese

- 1 cup fresh spinach leaves, chopped

- 1/2 cup roasted red peppers, chopped

- 2 cloves garlic, minced

- 1 tablespoon olive oil

- 1 teaspoon Italian seasoning

- Salt and pepper to taste

- Toothpicks or kitchen twine

Instructions:

1. Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil or non-stick spray.

2. In a small skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

3. In a mixing bowl, combine the shredded mozzarella cheese, chopped spinach, chopped roasted red peppers, sautéed garlic, Italian seasoning, salt, and pepper. Mix well to combine.

4. Using a sharp knife, make a horizontal slit along the side of each chicken breast to create a pocket, being careful not to cut all the way through.

5. Stuff each chicken breast with the mozzarella-spinach-red pepper mixture, dividing it evenly among the breasts. Secure the openings with toothpicks or tie with kitchen twine to hold the stuffing in place.

6. Season the outside of the chicken breasts with additional salt, pepper, and Italian seasoning, if desired.

7. Place the stuffed chicken breasts in the prepared baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and no longer pink in the center.

8. Once cooked, remove the toothpicks or kitchen twine from the chicken breasts before serving.

9. Serve the stuffed chicken breasts hot, accompanied by your favorite side dishes such as roasted vegetables, mashed potatoes, or a crisp green salad.

10. Enjoy the delicious combination of tender chicken, melted mozzarella, and flavorful spinach and roasted red peppers in every bite!
