Cherry pie is a classic dessert that has a sweet and sour cherry filling topped with a flaky, golden-brown crust. This homemade cherry pie recipe provides the perfect balance of cherry juice, sugar, and a touch of almond and vanilla flavors. The combination of refreshing cherries and buttery crust creates a cheerful taste perfect for any occasion, from holiday gatherings to simple family dinners. With a simple but delicious filling and a straightforward preparation process.

Ingredients:

  • 2 ½ cups cherries, pitted
  • 1 cup granulated sugar
  • ¼ cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • 1 package refrigerated pie crusts (for a double crust pie)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the cherries, sugar, cornstarch, lemon juice, vanilla extract, and almond extract. Mix well to coat the cherries evenly.
  3. Roll out one pie crust and place it in a pie dish. Trim any excess crust hanging over the dish.
  4. Pour the cherry filling into the pie crust, spreading it evenly.
  5. Roll out the second pie crust and use it to cover the cherry filling. Seal the edges by crimping with a fork or your fingers. Make a few slits on the top crust to allow steam to escape.
  6. Place the pie dish on a baking sheet to catch any drips. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  7. Remove the pie from the oven and let it cool for at least 2 hours before serving.

Enjoy your homemade cherry pie.
