TURKEY MEATBALLS CURRY WITH AVOCADO AND RED PEPPER

Enjoy a delicious blend of flavors with these curried turkey meatballs mixed with red pepper and avocado. This recipe combines the juiciness of ground turkey with aromatic curry spices and the freshness of avocado for a delicious dish that is sure to please.


Ingredients:

- 1 lb ground turkey

- 1 small red onion, finely chopped

- 2 cloves garlic, minced

- 1 tsp ground cumin

- 1 tsp ground coriander

- 1 tsp turmeric powder

- 1 tsp garam masala

- Salt and pepper to taste

- 1 red bell pepper, diced

- 1 can (14 oz) coconut milk

- 1 cup chicken or vegetable broth

- 1 ripe avocado, sliced

- Fresh cilantro for garnish

- Cooked rice or naan bread for serving


Instructions:

1. In a mixing bowl, combine ground turkey, chopped onion, minced garlic, ground cumin, ground coriander, turmeric powder, garam masala, salt, and pepper. Mix until well combined, then form into small meatballs.

2. Heat a bit of oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove from skillet and set aside.

3. In the same skillet, add diced red bell pepper and cook for 2-3 minutes until slightly softened.

4. Pour in the coconut milk and chicken or vegetable broth. Bring to a simmer.

5. Return the meatballs to the skillet and let them simmer in the curry sauce for another 10-15 minutes, or until cooked through and the sauce has thickened slightly.

6. Serve the turkey meatballs curry over cooked rice or with naan bread. Top with sliced avocado and fresh cilantro before serving.
