Ingredients:

  • 8 pieces of chicken (mix of thighs, drumsticks, or breasts)
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper (adjust to taste for spice)
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions:

  1. 1. Place the chicken pieces in a large bowl and cover them with buttermilk. Let them soak for at least 1 hour or overnight in the refrigerator. This helps tenderize the chicken and adds flavor.

  2. 2. In a separate bowl, mix together the flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper.

  3. 3. Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C).

  4. 4. Remove the chicken from the buttermilk and dredge each piece in the seasoned flour mixture, making sure to coat evenly.
  1. 5. Shake off any excess flour and carefully place the chicken pieces in the hot oil, making sure not to overcrowd the pan. Fry in batches if necessary.

  2. 6. Fry the chicken for about 10-12 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F (75°C).

  3. 7. Once cooked, transfer the fried chicken to a wire rack or paper towels to drain excess oil.
