Ingredients:
- 8 pieces of chicken (mix of thighs, drumsticks, or breasts)
- 2 cups buttermilk
- 2 cups all-purpose flour
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper (adjust to taste for spice)
- Salt and pepper to taste
- Vegetable oil for frying
Instructions:
- 1. Place the chicken pieces in a large bowl and cover them with buttermilk. Let them soak for at least 1 hour or overnight in the refrigerator. This helps tenderize the chicken and adds flavor.
- 2. In a separate bowl, mix together the flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper.
- 3. Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C).
- 4. Remove the chicken from the buttermilk and dredge each piece in the seasoned flour mixture, making sure to coat evenly.
- 5. Shake off any excess flour and carefully place the chicken pieces in the hot oil, making sure not to overcrowd the pan. Fry in batches if necessary.
- 6. Fry the chicken for about 10-12 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F (75°C).
- 7. Once cooked, transfer the fried chicken to a wire rack or paper towels to drain excess oil.
