Passion Fruit Cake Recipe Gluten-Free, Sugar-Free, Lactose-Free

Ingredients :


- 240 g of rice flour

- 120 g of natural sweetener (xylitol, erythritol or stevia)

- 5 g of baking powder

- 2.5 g of sodium bicarbonate

- 3 eggs

- 60 g of melted coconut oil

- 120 g of passion fruit pulp (about 4 passion fruits)

- 1 lemon

- 5 g of vanilla extract


Instructions :


1. Preheat the oven to 180°C and grease a cake tin with coconut oil.


2. In a large bowl, combine the rice flour, natural sweetener, baking powder and baking soda.


3. In another bowl, beat the eggs until slightly foamy. Add the melted coconut oil, passion fruit pulp, lemon zest and vanilla extract. Mix well.


4. Gradually add the liquid ingredients to the dry ingredient mixture, stirring until everything is well incorporated and the dough is smooth.


5. Pour the batter into the prepared cake pan and smooth the surface.


6. Bake the cake in the preheated oven for about 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.


7. Remove the cake from the oven and let it cool in the pan for a few minutes before transferring it to a cooling rack.


8. Once the cake has completely cooled, you can cut it into pieces and serve it.
