Creamy Mushroom and Wild Rice Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced (any variety you prefer)
  • 1/2 cup wild rice, rinsed and drained
  • 4 cups vegetable broth
  • 1 cup unsweetened almond milk (or any plant-based milk)
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions:

  1. 1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and cook until softened, about 5 minutes.

  2. 2. Add sliced mushrooms to the pot and cook until they release their moisture and become golden brown, about 8-10 minutes.

  3. 3. Stir in wild rice and vegetable broth. Bring to a boil, then reduce heat and simmer until rice is cooked and tender, about 35-40 minutes.

  4. 4. Stir in almond milk and simmer for another 5 minutes.

  5. 5. Season with salt and pepper to taste. Serve hot, garnished with fresh thyme if desired.
