Grilled salmon skewers with cilantro sauce are the perfect quick and easy, healthy weeknight dinner.

Ingredients:

  • 1 lb salmon fillets, skin removed, cut into cubes
  • Wooden skewers, soaked in water for 30 minutes
  • Salt and pepper to taste
  • Olive oil for brushing

For the cilantro sauce:

  • 1 cup fresh cilantro leaves, chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions:
