Ingredients:
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- Zest and juice of 1 lemon
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- Salt and pepper to taste
Instructions:
- 1. In a bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, chopped rosemary, salt, and pepper.
- 2. Place the chicken breasts in a shallow dish or a resealable plastic bag and pour the marinade over them, making sure they are evenly coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
- 3. Preheat your grill to medium-high heat.
- 4. Remove the chicken from the marinade and discard any excess marinade.
- 5. Grill the chicken breasts for 6-8 minutes per side, or until cooked through and no longer pink in the center, and the juices run clear. The internal temperature should reach 165°F (75°C).
- 6. Remove the chicken from the grill and let it rest for a few minutes before serving.
- 7. Optionally, garnish with additional chopped rosemary and lemon slices before serving.
