Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup honey
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 teaspoons cornstarch
  • 2 tablespoons water
  • Sesame seeds and chopped green onions for garnish (optional)

Instructions:

  1. 1. Place the chicken breasts in the slow cooker.

  2. 2. In a bowl, whisk together the honey, soy sauce, ketchup, minced garlic, olive oil, and red pepper flakes (if using).

  3. 3. Pour the sauce over the chicken in the slow cooker.

  4. 4. Cook on low for 4-6 hours or high for 2-3 hours, until the chicken is cooked through and tender.

  5. 5. Once the chicken is cooked, remove it from the slow cooker and shred it using two forks. Place the shredded chicken back into the slow cooker.

  1. 6. In a small bowl, mix together the cornstarch and water to create a slurry. Pour the slurry into the slow cooker and stir to combine with the sauce.

  2. 7. Cook on high for an additional 30 minutes, or until the sauce has thickened.

  3. 8. Serve the honey garlic chicken over rice or noodles, garnished with sesame seeds and chopped green onions if desired.
