Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup honey
- 1/2 cup soy sauce
- 1/4 cup ketchup
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/4 teaspoon red pepper flakes (optional)
- 2 teaspoons cornstarch
- 2 tablespoons water
- Sesame seeds and chopped green onions for garnish (optional)
Instructions:
- 1. Place the chicken breasts in the slow cooker.
- 2. In a bowl, whisk together the honey, soy sauce, ketchup, minced garlic, olive oil, and red pepper flakes (if using).
- 3. Pour the sauce over the chicken in the slow cooker.
- 4. Cook on low for 4-6 hours or high for 2-3 hours, until the chicken is cooked through and tender.
- 5. Once the chicken is cooked, remove it from the slow cooker and shred it using two forks. Place the shredded chicken back into the slow cooker.
- 6. In a small bowl, mix together the cornstarch and water to create a slurry. Pour the slurry into the slow cooker and stir to combine with the sauce.
- 7. Cook on high for an additional 30 minutes, or until the sauce has thickened.
- 8. Serve the honey garlic chicken over rice or noodles, garnished with sesame seeds and chopped green onions if desired.
