Keto Avocado Stuffed Chicken
Ingredients:
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 ripe avocado
- 1/4 cup shredded mozzarella cheese
- 2 tablespoons chopped fresh cilantro (optional)
- 1 tablespoon lime juice
- 1 clove garlic, minced
- 1 tablespoon olive oil
Instructions:
- 1. Preheat your oven to 375°F (190°C).
- 2. Season the chicken breasts with salt and pepper.
- 3. In a bowl, mash the avocado. Mix in the shredded mozzarella cheese, chopped cilantro (if using), lime juice, and minced garlic until well combined.
- 4. Slice a pocket into each chicken breast, being careful not to cut all the way through.
- 5. Stuff each chicken breast with the avocado mixture, dividing it evenly between the two breasts.
- 6. Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts to the skillet.
- 7. Cook the chicken for 3-4 minutes on each side until browned.
- 8. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- 9. Remove from the oven and let the chicken rest for a few minutes before serving.
