Keto Avocado Stuffed Chicken


Ingredients:

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 ripe avocado
  • 1/4 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh cilantro (optional)
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1 tablespoon olive oil

Instructions:

  1. 1. Preheat your oven to 375°F (190°C).

  2. 2. Season the chicken breasts with salt and pepper.

  3. 3. In a bowl, mash the avocado. Mix in the shredded mozzarella cheese, chopped cilantro (if using), lime juice, and minced garlic until well combined.

  4. 4. Slice a pocket into each chicken breast, being careful not to cut all the way through.

  5. 5. Stuff each chicken breast with the avocado mixture, dividing it evenly between the two breasts.
