Ingredients:
- 8 oz (225g) spaghetti
- 4 slices of bacon or pancetta, diced
- 2 large eggs
- 1/2 cup (50g) grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and black pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions:
- 1. Cook spaghetti according to package instructions in a large pot of boiling salted water until al dente. Drain, reserving 1/2 cup of pasta water.
- 2. While the spaghetti is cooking, heat a skillet over medium heat. Add diced bacon or pancetta and cook until crisp. Remove from the skillet and set aside, leaving the bacon fat in the skillet.
- 3. In a bowl, whisk together eggs, Parmesan cheese, minced garlic, salt, and black pepper.
- 4. Once the spaghetti is cooked and drained, return it to the pot. Pour the egg mixture over the hot spaghetti and quickly toss to coat, allowing the residual heat to cook the eggs and create a creamy sauce. If the sauce is too thick, add some of the reserved pasta water a little at a time until desired consistency is reached.
- 5. Add the cooked bacon or pancetta to the spaghetti and toss to combine.
- 6. Serve immediately, garnished with chopped parsley if desired.
