simple recipe for cauliflower fritters with spiced yogurt

Ingredients:

For the fritters:

  • 1 small head cauliflower, cut into florets
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 green onions, finely chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 eggs, lightly beaten
  • 2-3 tablespoons olive oil for frying

For the spiced yogurt:

  • 1 cup Greek yogurt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh cilantro (optional)

Instructions:

  1. 1. Prepare the cauliflower: Steam the cauliflower florets until they are tender, about 5-7 minutes. Drain well and let cool slightly.


  2. 2. Make the batter: In a large bowl, combine the cooked cauliflower, flour, Parmesan cheese, minced garlic, chopped green onions, ground cumin, paprika, salt, and pepper. Mix well to combine. Add the beaten eggs and stir until everything is evenly coated.

  1. 3. Form the fritters: Heat olive oil in a large skillet over medium heat. Scoop about 2 tablespoons of the cauliflower mixture and form into patties. Place them in the skillet and flatten slightly with a spatula. Cook until golden brown and crispy, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain any excess oil.


  2. 4. Make the spiced yogurt: In a small bowl, mix together the Greek yogurt, ground cumin, ground coriander, paprika, salt, pepper, and chopped cilantro if using. Adjust seasoning to taste.

5. Serve: Serve the cauliflower fritters hot with the spiced yogurt on the side for dipping.
