Ingredients:

  • 4 large flour tortillas
  • 6 large eggs, beaten
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled breakfast sausage or bacon
  • 1/2 cup diced bell peppers (optional)
  • 1/4 cup chopped green onions (optional)
  • Salt and pepper to taste
  • Cooking spray or butter for cooking

Instructions:

  1. 1. Prepare Ingredients: Cook and crumble the breakfast sausage or bacon. Beat the eggs and season with salt and pepper. Shred the cheese and chop any vegetables if using.


  2. 2. Cook Eggs: Heat a non-stick skillet over medium heat and spray with cooking spray or melt butter. Pour the beaten eggs into the skillet and let them cook, stirring occasionally, until scrambled and fully cooked. Remove from heat.

  1. 3. Assemble Quesadillas: Lay out the flour tortillas on a clean surface. Sprinkle an even layer of shredded cheese on half of each tortilla. Add a portion of scrambled eggs, cooked sausage or bacon, diced bell peppers, and chopped green onions if using. Fold the tortillas in half to enclose the filling.
