Salmon with vegetables easy and healthy

Ingredients:

  • 2 salmon fillets
  • 2 cups of mixed vegetables (such as bell peppers, zucchini, broccoli, and carrots), chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Lemon wedges for serving
  • Optional: herbs like dill, thyme, or parsley for garnish

Instructions:

  1. 1. Preheat your oven to 400°F (200°C).

  2. 2. Place the salmon fillets on a baking sheet lined with parchment paper or foil.

  3. 3. In a bowl, toss the chopped vegetables with olive oil, minced garlic, salt, and pepper until evenly coated.

  4. 4. Spread the seasoned vegetables around the salmon fillets on the baking sheet.

  5. 5. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
