Ingredients:
- 4 boneless, skinless chicken breasts
- 2 ripe avocados, diced
- 1 small red onion, finely chopped
- 1 tomato, diced
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
- 1. Preheat your grill to medium-high heat.
- 2. Season the chicken breasts with salt and pepper on both sides.
- 3. Grill the chicken for 6-8 minutes per side, or until cooked through and no longer pink in the center.
- 4. While the chicken is grilling, prepare the avocado salsa. In a mixing bowl, combine diced avocado, red onion, tomato, cilantro, lime juice, salt, and pepper. Gently toss to combine.
- 5. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
- 6. Serve the grilled chicken topped with avocado salsa.
