Grilled Chicken with Avocado Salsa

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 ripe avocados, diced
  • 1 small red onion, finely chopped
  • 1 tomato, diced
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions:

  1. 1. Preheat your grill to medium-high heat.

  2. 2. Season the chicken breasts with salt and pepper on both sides.

  3. 3. Grill the chicken for 6-8 minutes per side, or until cooked through and no longer pink in the center.
  1. 4. While the chicken is grilling, prepare the avocado salsa. In a mixing bowl, combine diced avocado, red onion, tomato, cilantro, lime juice, salt, and pepper. Gently toss to combine.

  2. 5. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.

  3. 6. Serve the grilled chicken topped with avocado salsa.
