Ingredients:
- 1 pound large shrimp, peeled and deveined
- 3-4 medium zucchini, spiralized into noodles
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Zest and juice of 1 lemon
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions:
- 1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant.
- 2. Add the shrimp to the skillet and season with salt, pepper, and red pepper flakes. Cook for 2-3 minutes on each side, until the shrimp are pink and cooked through. Remove the shrimp from the skillet and set aside.
- 3. In the same skillet, add the remaining tablespoon of olive oil. Add the spiralized zucchini noodles and cook for 2-3 minutes, tossing occasionally, until the noodles are just tender.
- 4. Return the cooked shrimp to the skillet with the zucchini noodles. Add the lemon zest and juice, tossing everything together until heated through and well combined.
- 5. Taste and adjust seasoning if needed. Serve the lemon garlic shrimp zoodles hot, garnished with fresh chopped parsley.
