Mixed salad greens (such as arugula, spinach, or mixed greens)
Cherry tomatoes, halved
Cucumber, sliced
Red onion, thinly sliced
Kalamata olives
Olive oil
Balsamic vinegar
Salt and pepper to taste
Optional: fresh herbs like mint or basil for garnish
Instructions:
1. Preheat your grill or grill pan over medium-high heat.
2. While the grill is heating, prepare your salad ingredients by washing and chopping the greens, tomatoes, cucumber, and onion. Place them in a large bowl along with the olives.
3. Brush the halloumi slices lightly with olive oil on both sides.
4. Once the grill is hot, place the halloumi slices on the grill and cook for 2-3 minutes on each side, or until grill marks form and the cheese is softened.
5. Remove the grilled halloumi from the grill and let it cool slightly.
6. Arrange the grilled halloumi slices on top of the salad greens.
7. Drizzle the salad with olive oil and balsamic vinegar.
