Ingredients:
- 2 boneless, skinless chicken breasts
- 2 medium sweet potatoes
- 1 cup green beans, trimmed
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs (you can use seasoned breadcrumbs for extra flavor)
- Salt and pepper to taste
- Olive oil for cooking
Instructions:
1. Preheat Oven: Preheat your oven to 400°F (200°C).
2. Prepare Ingredients:
- Peel the sweet potatoes and cut them into thin slices.
- Season the chicken breasts with salt and pepper.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
- 3. Bread the Chicken:
- Dredge each chicken breast in the flour, shaking off any excess.
- Dip the chicken into the beaten eggs, ensuring it's evenly coated.
- Finally, coat the chicken in breadcrumbs, pressing gently to adhere.
4. Cook the Chicken:
- Heat some olive oil in an oven-safe skillet over medium-high heat.
- Once hot, add the breaded chicken breasts and cook for about 2-3 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through and no longer pink in the center.
5. Cook the Sweet Potatoes:
- While the chicken is baking, arrange the sweet potato slices on a baking sheet lined with parchment paper.
- Drizzle with olive oil and season with salt and pepper.
- Bake in the oven for 20-25 minutes or until tender and slightly caramelized.
6. Steam the Green Beans:
- While the chicken and sweet potatoes are cooking, steam the green beans until tender, about 5-7 minutes.
7. Serve:
- Once everything is cooked, serve the breaded chicken breasts with the roasted sweet potato slices and steamed green beans.
