Ingredients:

  • 1 9-inch vegan pie crust (store-bought or homemade)
  • 2 cups soy milk (or any plant-based milk of your choice)
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Fresh fruit or berries for topping (optional)



Instructions:

  1. 1. Preheat your oven to 350°F (175°C).

  2. 2. Place the pie crust in a 9-inch pie dish and crimp the edges if desired.

  3. 3. In a saucepan, whisk together the soy milk, sugar, cornstarch, vanilla extract, and salt over medium heat until well combined and smooth. Continue to cook, stirring constantly, until the mixture thickens and begins to bubble.

  4. 4. Once the mixture has thickened, pour it into the prepared pie crust.

  5. 5. Bake the flan in the preheated oven for 25-30 minutes, or until the crust is golden brown and the filling is set.
