Ingredients:
- 1 head of broccoli, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 1 cup milk (or non-dairy milk for a vegan option)
- Salt and pepper to taste
- Olive oil for sautéing
- Optional: grated cheese, croutons, or fresh herbs for garnish
Instructions:
- 1. In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened and fragrant, about 5 minutes.
- 2. Add the chopped broccoli to the pot, and continue to cook for another 5 minutes, stirring occasionally.
- 3. Pour in the vegetable broth, and bring the mixture to a simmer. Let it cook for about 15-20 minutes, or until the broccoli is tender.
- 4. Using an immersion blender or regular blender, carefully blend the soup until smooth. Be cautious if using a regular blender, as hot liquids can cause pressure to build up.
- 5. Return the blended soup to the pot, and stir in the milk. Heat the soup gently until warmed through.
- 6. Season with salt and pepper to taste.
- 7. Serve hot, garnished with grated cheese, croutons, or fresh herbs if desired.
