Ingredients:

  • 1 head of broccoli, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 cup milk (or non-dairy milk for a vegan option)
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Optional: grated cheese, croutons, or fresh herbs for garnish

Instructions:

  1. 1. In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened and fragrant, about 5 minutes.

  2. 2. Add the chopped broccoli to the pot, and continue to cook for another 5 minutes, stirring occasionally.

  3. 3. Pour in the vegetable broth, and bring the mixture to a simmer. Let it cook for about 15-20 minutes, or until the broccoli is tender.
  1. 4. Using an immersion blender or regular blender, carefully blend the soup until smooth. Be cautious if using a regular blender, as hot liquids can cause pressure to build up.
