Ingredients:
- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 4 ounces fresh mozzarella cheese, sliced
- Balsamic glaze (store-bought or homemade)
- Fresh basil leaves, for garnish
Instructions:
- 1. Preheat your oven to 400°F (200°C).
- 2. Season the chicken breasts with salt and pepper on both sides.
- 3. In an oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 3-4 minutes on each side until golden brown.
- 4. Remove the skillet from heat and add minced garlic and cherry tomatoes around the chicken breasts.
- 5. Place slices of fresh mozzarella cheese on top of each chicken breast.
- 6. Transfer the skillet to the preheated oven and bake for 10-15 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
- 7. Once done, drizzle with balsamic glaze and garnish with fresh basil leaves.
