easy dinner recipe: One-Pan Italian Sausage and Veggie Bake

Ingredients:
- 4 Italian sausage links (mild or spicy, whichever you prefer)
- 1 bell pepper, sliced
- 1 red onion, sliced
- 2 cups cherry tomatoes
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Grated Parmesan cheese (optional, for serving)
Instructions:
- 1. Preheat your oven to 400°F (200°C).
- 2. Arrange the Italian sausage links, sliced bell pepper, sliced red onion, and cherry tomatoes on a large baking sheet.
- 3. In a small bowl, whisk together the olive oil, minced garlic, dried oregano, dried basil, salt, and pepper.
- 4. Drizzle the olive oil mixture over the sausage and veggies, tossing to coat everything evenly.
- 5. Bake in the preheated oven for 25-30 minutes, or until the sausage is cooked through and the vegetables are tender and slightly caramelized.
- 6. Remove from the oven and sprinkle with grated Parmesan cheese if desired.
- 7. Serve hot, either on its own or with crusty bread or pasta.
