Ingredients:

  • 4 Italian sausage links (mild or spicy, whichever you prefer)
  • 1 bell pepper, sliced
  • 1 red onion, sliced
  • 2 cups cherry tomatoes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional, for serving)

Instructions:

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Arrange the Italian sausage links, sliced bell pepper, sliced red onion, and cherry tomatoes on a large baking sheet.

  3. 3. In a small bowl, whisk together the olive oil, minced garlic, dried oregano, dried basil, salt, and pepper.

  4. 4. Drizzle the olive oil mixture over the sausage and veggies, tossing to coat everything evenly.
