Sweet Potato Brownies:



Ingredients:

  • 1 cup mashed sweet potato (about 1 large sweet potato)
  • 1/2 cup almond butter (or any nut butter of your choice)
  • 1/4 cup maple syrup or honey
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions:

  1. 1. Preheat your oven to 350°F (175°C). Grease or line an 8x8 inch baking pan with parchment paper.


  2. 2. Peel, dice, and boil the sweet potato until soft. Drain and mash until smooth. Measure out 1 cup of mashed sweet potato.


  3. 3. In a mixing bowl, combine the mashed sweet potato, almond butter, maple syrup (or honey), cocoa powder, vanilla extract, baking powder, and salt. Mix until well combined.


  4. 4. If using chocolate chips, fold them into the batter.

  1. 5. Pour the batter into the prepared baking pan and spread it out evenly.


  2. 6. Bake in the preheated oven for 25-30 minutes or until the edges are set and a toothpick inserted into the center comes out mostly clean with a few moist crumbs.


  3. 7. Remove from the oven and let the brownies cool completely in the pan on a wire rack.
