Homemade Apple Pie
Ingredients:
For the crust:
- 2 1/2 cups all-purpose flour
- 1 cup (2 sticks) unsalted butter, cold and cubed
- 1 teaspoon salt
- 1 teaspoon granulated sugar
- 6-8 tablespoons ice water
For the filling:
- 6-7 medium-sized apples (such as Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
- 1/2 cup granulated sugar
- 1/4 cup packed brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 2 tablespoons unsalted butter, cut into small pieces
For assembly:
- 1 egg, beaten (for egg wash)
- Additional granulated sugar (for sprinkling)
Instructions:
1. Prepare the crust:
- -In a large mixing bowl, combine the flour, salt, and sugar. Add the cold cubed butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
- -Gradually add the ice water, 1 tablespoon at a time, mixing with a fork until the dough comes together. Be careful not to overwork the dough.
- -Divide the dough in half, shape each half into a disk, wrap them in plastic wrap, and refrigerate for at least 1 hour.
2. Preheat the oven:
-Preheat your oven to 425°F (220°C). Place a baking sheet in the oven to preheat as well (this helps crisp the bottom crust).
3. Prepare the filling:
- -In a large bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Toss until the apples are evenly
4. Roll out the crust:
- -On a lightly floured surface, roll out one disk of dough into a circle large enough to line a 9-inch pie dish. Transfer the rolled dough to the pie dish and gently press it into the bottom and sides.
- -Trim any excess dough hanging over the edges.
5. Fill the pie:
- -Pour the apple filling into the prepared pie crust, mounding it slightly in the center. Dot the top of the filling with small pieces of butter.
6. Top the pie:
- -Roll out the second disk of dough into a circle large enough to cover the pie. Place the dough over the filling. Trim any excess dough and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.
7. Bake the pie:
- -Brush the top crust with the beaten egg and sprinkle with granulated sugar.
- -Place the pie on the preheated baking sheet in the oven and bake for 45-55 minutes, or until the crust is golden brown and the filling is bubbly.
- -If the crust starts to brown too quickly, cover the edges with aluminum foil and continue baking.
8. Cool and serve:
- -Allow the pie to cool on a wire rack for at least 2 hours before serving. This allows the filling to set.
- -Serve slices of apple pie warm or at room temperature, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
